Fried banana sandwich

A very delicious, very easy winter weekend breakfast recipe. Just the thing if you fancy a slightly special hot breakfast on the spur of the moment. I hardly need to say that it can only be as good as the bread you use! It's less hassle to make than pancakes and, for my money, just as good.

The ingredients are per sandwich.

  • 1 banana
  • 1 teaspoon soft brown sugar
  • pinch of ground cinnamon
  • a little butter for spreading and frying
  • 2 slices of good bread, preferably walnut bread, but any will do
  • 1 egg, beaten
  • maple syrup

Mash the banana with the sugar and cinnamon. Butter both slices of bread and sandwich the banana in between. Beat the egg lightly in a shallow bowl, wide enough to accommodate the sandwich, then dip the sandwich in the beaten egg, turning it over so both sides are soaked.

Heat a little butter in a small frying pan, and fry the sandwich over a medium heat for about 5 minutes each side, until golden brown and slightly crisp. Turn the heat down if necessary to prevent burning, but don't reduce the cooking time or the banana won't be hot. Serve with warm maple syrup.
